Cold Iced Tea and Warmer Weather

Have you ever got that song stuck in your head? "We go together, like cold Iced Tea and warmer weather" it always makes me think of summertime and experimenting with iced teas and cold brews. Its far better, healthier and cheaper to make your own rather than buy the pre bottled or canned varieties. So how do you actually make an iced tea, or a cold brew? Read on to see how...
Generally when you're making iced tea or cold brew you need to double the amount of tea you use when making a hot drink, this can be adjusted to taste
Iced Tea
When I want an iced tea and I want it now, this is the method I use -
Put two teaspoons of your chosen tea in a jug (loose or in a strainer ball)
Add about an inch of boiling water (2cm to the younger generation!)
Leave to cool (you can speed this up by putting it on the fridge)
Strain into a glass (or remove strainer ball)
Add 250 - 300 ml of cold water and ice
Enjoy
Cold Brew
This is a fantastic alternative to sugary cordials and dilute juices, when you choose a fruity caffeinated tea this also can be a fantastic energy drink
Add 6 teaspoons of your chosen tea to 1 litre of cold water (loose or in a strainer ball)
Place in the fridge overnight or for at least 8 hours
Strain into a bottle or jug (or remove strainer ball)
Enjoy with or without ice
Which Tea?
Basically you can use any tea you like hot as iced tea or cold brew, black tea has a wonderfully subtle flavour when brewed in cold water. When you use a flavoured black tea like for instance Blue Lady which is Chinese black tea with Grapefruit, Rose, Blue Mallow, Marigold and Blue Corn Flowers the end result is a gorgeous fruity, refreshing tea. You can also experiment with black tea and actual fruit pieces or puree....
Fruit infusions (all fruit, no tea) work fantastically as shown above - these have no tea in them and so are naturally de-caffeinated, perfect for sunny evenings in the garden and suitable for children.
Strawberry & Kiwi Fruit Infusion, Blood Orange Fruit Infusion, Passionfruit & Orange Fruit Infusion are delicious, all natural options, packed with flavour and full of vitamin C
Blue Moon and Arabian Night are fancy options, if you want something extra special
Blue Moon is lemongrass, ginger and butterfly pea flowers, when it brews it is a gorgeous deep blue colour - when you serve it, add a slice of lemon to watch it slowly change to a rich purple - served in a cocktail glass at a garden party it makes a real show piece!
Arabian Nights is hibiscus flowers with ginger and cinnamon, this rich fruity drink is just like red wine but without the alcohol (caffeine free too) and so is a great addition to any garden party for those needing a mocktail. Or even just for a quiet afternoon at home when it's not wine o'clock yet
